Who are you and where do you come from?
I'm from South of France, I have a quite a few mix origin in my familly, Catalan Spain, Sardinia Italy, Pied-Noir Algerian & Vietnames.
When did you start working in a kitchen?
The first time I had the chance to wear the unfiform I was 14 years old
Where does your inspiration come from?
How would you describe your style of cooking?
Fusion, discovering new ingredients and skills while working and travelling, influences my food
What is your favorite ingredient?
I would hardly pick one, I have the most fun with Ingredients from the Sea I would say
What is your favorite thing to cook?
What is your favorite cuisine?
I don't have one in particular, French, Japanesse, Indian, Mexican would be my most favorite one.
What is your advice to people who want to become a chef?
Be Fair & Care, fair with the customer which pays you salary, deliver survice to match their expectation, fair with your coowokers which is going to be pretty much like your familly, care, care about the quality of the food you do, each dish you'll put up should be something you be proud to serve to your own mother
What is your ultimate food dream?
To own my own place somewhere in Asia, mix of funky cocktail bar and fine dinning restaurant avant garde.

Where do you see yourself in 1 year, 3 years and 5 years?
I could hardly answer that, for the past 3 job in the past 4 years I received job offer and did not apply for a work, i'm going to stay where I am for a other year and see where the wind will take me...
