Who are you and where do you come from?
Hi i'm Jurgen Koens and i come from the South of The Netherlands
When did you start working in a kitchen?
since my 15 age
Where does your inspiration come from?
Nature, buildings, designs, urban, music etc etc
How would you describe your style of cooking?
refreshing always with different textures, love to work with fruits, spices, herbs in combinations with chocolate. Always searching for new flavors and textures but respect the flavor of it.
What is your favorite ingredient?
Citrus and chocolate.
What is your favorite thing to cook?
grand mothers apple pie.......
What is your favorite cuisine?
What is your advice to people who want to become a chef?
work hard, don't stay to long with the chef where you work for. Look and see how people work. And work abroad. ask always ask and make a lot of note.
What is your ultimate food dream?
That everybody can afford to have good food.
Where are you working now?
I run my own business Pastryclub 1.0 & 2.0 in Eindhoven and i have my consult company jurgenkoens.nl
Where do you see yourself in 1 year, 3 years and 5 years?
hopefully i can franchise my Pastryclub concept and run it world wide.
