Inventive, orignal, always using sustainable produce

Could not put that down to a single ingredient
What is your favorite thing to cook?
I LOVE curries
What is your favorite cuisine?
Would have to be a combination of Indian, Thai & Japanese
What is your advice to people who want to become a chef?
Before enrolling in an expensive chefs school, go and spend a month in a professional kitchen to gage weather it is a career you want to spend the rest of your life doing. It is a tough industry, and you have to work extra hard if you want to create a name for yourself.
What is your ultimate food dream?
Travelling the world and experiencing different cuisines
