Who are you and where do you come from?
My name is Gunter Paffendorf and I’m from the Netherlands.
When did you start working in a kitchen?
I started at the age of 15.
Where does your inspiration come from?
I get inspired by the beautiful products that nature gives us. The amazing colours, structures and forms that pop right out of the ground. My inspiration also comes from starchefs around the world; what the make, how they tell about their dishes and what they already achieved by the hard work they have done.
How would you describe your style of cooking?
Creative, molecular gastronomy, working with fresh ingredients.
What is your favorite ingredient?
Chocolate, mango, beetroot, different kind of cress, edible flowers, forgotten vegetables.

What is your advice to people who want to become a chef?
”If you can’t stop thinking about it, don’t stop working for it. Work until you no longer have to introduce yourself.”
What is your ultimate food dream?
To become a Michelin star chef.

At ‘hartenstein@laurie’ – a French cuisine restaurant.
Where do you see yourself in 1 year, 3 years and 5 years?
In 1 year from now I will become a souschef, after that I want to become to lead my own kitchenteam. I 5 years from now I hope that my dreams will become reality and that I will have the knowledge and skills to become the chef I always wanted to be.
