Who are you and where do you come from?
My name is David Vidal and I come from Malta.

When did you start working in a kitchen?
I started working in the kitchen when I was 13, helping in my uncle’s confectionary alongside my dad.

Where does your inspiration come from?
One of my best food memories would be my mom’s lasagna and that’s where my inspiration comes from, good food, no matter if its home cooked, fine dining or at the local pub.

How would you describe your style of cooking?
My style of cooking is a mix of Mediterranean and Nordic cuisine.

What is your favorite ingredient?
Very hard question as there is so many but it has to be fresh basil.

What is your favorite thing to cook?
My favorite thing to cook is pasta and risotto.

What is your favorite cuisine?
Italian cuisine would be my favorite type of cuisine.

What is your advice to people who want to become a chef?
It’s going to be a lot of hard work. Work in places and with people that inspire you.

What is your ultimate food dream?
My ultimate food dream would be to one day have my own restaurant.

Where are you working now?
I am now working as a sous chef at Laholmen Hotel in Strömstad, Sweden.

Where do you see yourself in 1 year, 3 years and 5 years?
In 1 year I see myself continuing to develop in new skills and techniques. In 3 years hope to be a head chef in a restaurant or hotel and in 5 years to open my own restaurant.
