I originally trained as a pastry chef but got bored. Funnily enough the thing made me become a chef was watching Gordon Ramsay!.. I wanted to be him!! I gave my notice and 2 weeks later I started as a commis on the breakfast shift! Best decision I've ever made! Since then I've worked in quite a few hatted restaurants in Queensland and northern New South Wales trying to soak up as much knowledge and techniques as I possibly could! Finally for the last 3 years I lived and worked in London ending with me running a restaurant that got awarded a bib gourmand in the Michelin guide 2017! Now I'm back home in Aus travelling, and looking for my first head chef job on home soil!! I can't fucking wait to get my food out there!
